On the Aviary, the willfully atypical cocktail lounge he based in Chicago in 2011, the title of every drink is preceded by a hen silhouette like those on the endpapers of Roger Tory Peterson’s discipline guides. The nearer the silhouette is to the title, the extra the cocktail will resemble one thing Nick and Nora Charles would have acknowledged. The farther away the hen, the weirder the drink.

Throughout my first flight on the Aviary’s new Manhattan incarnation, my server pointed to the entry for Convey One other Smurf, a mezcal and coconut drink. “If you happen to look over right here,” he stated, sliding his finger left, “the hen is all the best way out.”

Is a cocktail improved when its hen is all the best way out?
